Gillette Creamery is proud to announce our very own line of all natural ice cream mix. Available in Vanilla & Chocolate. Gillette Creamery believes that our mix is ice cream “The Way It Was Meant To Be.”
They both use a very simple blend of ingredients: Milk, Cream, Skim Milk, and Pure Cane Sugar, Dextrose, Guar Gum, Locust Bean Gum, and Carrageenan. Vanilla uses pure vanilla extract for flavoring while chocolate uses cocoa & chocolate powder.
Guar Gum, Locust Bean Gum, and Carrageenan tend to be unfamiliar with most people but these are essential ingredients in soft serve ice cream mix. They are natural plant based stabilizers that create the ice creams body, texture, and creaminess. They also slow down and provide a more uniform melting process.
Guar gum is made from guar beans and is used in foods and beverages, guar gum is used as a thickening, stabilizing, suspending, and binding agent.
Carageenan is from red seaweed. It’s used in ice cream because it thickens, binds and stabilizes, a.k.a. keeps ingredients from separating.
Locust Bean Gum is from carob tree. It is used as a stabilizer in primarily to increase mix viscosity and to inhibit ice and lactose crystal growth during storage, especially during periods of temperature fluctuation.
